Austin Kitchen Garden: Vegetables to Plant in February

We have made it to February and here in Austin the days are feeling more like spring.  The beauty of gardening here in zone 8b/9 is that it is rare that we CAN’T garden.  We’re not as spoiled as Southern Cali but gifted with almost year-round gardening.

January and February are crucial months to prep for an abundant harvest in the spring.  If you missed the article, you can read more about the February Checklist to help you get prepared.  

So let’s get down to the nitty gritty. 

VEGETABLE SEEDS TO START INDOORS

If you are wanting to start your own seeds indoors this month for spring and summer start with:

  • tomatoes

  • peppers

  • eggplant

  • lettuce

  • melons

  • cucumbers. 

Make note of your days-to-harvest to ensure they can be transplanted in the right month. 

February VEGETABLES TO DIRECT SOW

Asian Greens, Beets, Broccoli, Cabbage, Carrots, Collards, Eggplant, Endive, Garlic, Leeks, Lettuce, Mizuna, Mustard,  Onions, Peas,, Parsley, Potatoes, Spinach, Swiss Chard, Radish, Turnips

HERBS + EDIBLES TO DIRECT SOW

Borage, Calendula, Chives, Cilantro, Coriander, Dill, Echinacea, Fennel, Feverfew, Lavender, Nasturtium, Oregano, Pansies, Parsley, Oregano, Rosemary, Thyme, Sage, Snapdragon, Sorrel, Viola

FRUIT TO PLANT

Apples, peaches, pecans, pears, pomegranates, persimmons, figs, almonds, grapes, strawberries, raspberries, blackberries
